Dealing with the Heat


Are you, like me, addicted to spicy food - dishes fortified with hot chiles in one form or another? I took up cooking as a hobby in part because I wanted to replicate the Thai green curry I had eaten at a local restaurant, and this interest led me to pursue Indian, Indonesian and other Asian cuisines. My kitchen is now stocked with an extensive range of exotic spices and condiments and, of course, chiles from around the world in every possible form (dried, pastes, oils, fresh, etc.).
